Mezonte Michoacán, produced by master mezcalero Jorge Pérez, is a high-quality artisanal mezcal, renowned for its connection to the ancestral traditions of Michoacán. Mezonte is a nonprofit organization that supports traditional agave producers, including Jorge Pérez, to preserve their cultural practices. Made primarily with Alto agave (Agave inaequidens). The process is highly traditional: the agaves are cooked in shallow brick ovens, fermented in masonry vats with the addition of pulque, and distilled using a hollowed-out tree trunk still with a copper top.
