Don Mateo de la Sierra Manso de Sahuayo is produced using the Manso Sahuayo maguey. This agave is endemic to the municipality of Sahuayo, Michoacán. Mezcalero Emilio Vieyra works with local farmers to source the finest agaves possible.The harvested agaves are toasted in a pit oven and fermented in wooden vats. The still is a Filipino-style alembic made of pine and oyamel. Heads, tails, and natural spring water are used to adjust the alcohol content.
