This fifth special edition of Dixeebe Espadín mezcal, produced by Valentín Cortés in Santiago Matatlan, Oaxaca, offers a bouquet reminiscent of vanilla cake with citrus and smoky notes.
On the palate, it is smooth, with a cheesecake flavor, but with sweet notes of cooked agave, herbaceous astringency, and a finish with essences of oyster sauce and a touch of smokiness that balances its impressive 49% ABV.
Production Process
Agave: Espadín (Agave angustifolia).
Firing: Conical earthen oven.
Milling: Tahona (stone mill) and horse-drawn mill.
Fermentation: Pinewood barrels.
Distillation: Copper still.
